Castiglione della Pescaia – Italy – 2010

Within the landscape of modern Italian wineries, Le Mortelle stands as a benchmark project in innovative winemaking, where architecture, design and technology come together to enhance both product quality and visitor experience.

Located in Castiglione della Pescaia, in the heart of the Tuscan Maremma, the Marchesi Antinori estate extends over 270 hectares, with more than 170 vineyards. The winery produces high-quality wines in full respect of the terroir, focusing on varieties such as Cabernet Sauvignon, Cabernet Franc, Vermentino and Carménère.

Gravity-flow winemaking system

A defining feature of the winery is its gravity-fed winemaking system, an advanced solution designed to preserve grape integrity throughout the entire production process. This configuration required the design and manufacturing of custom stainless steel wine tanks and highly specialized winery equipment, fully integrated into the underground architecture of the building.
In this context, LASI supplied a complete winemaking system consisting of conical stainless steel tanks equipped with automatic pomace extraction systems and integrated with the patented Leonardo® punch-down technology, ensuring optimized fermentation control.
The entire installation was engineered to perfectly fit the winery layout, featuring a distinctive suspended ring configuration at the center of the production area, combining winery engineering, advanced technology and architectural design, and positioning Le Mortelle as a reference point among next-generation wineries
