The Leonardo® punch down system was born from an idea that pays tribute to the genius of the Renaissance: Leonardo da Vinci.
Its development draws inspiration from his studies on fluid mechanics and hydraulic systems. Through detailed enological observations, prototypes, and real-world testing, we created our patented system for grape handling and cap management during fermentation. This system is fully integrated into the winemaking process.
One punch down system for many fermenters
Leonardo® was designed with a clear vision: to give winemakers full control over the winemaking.
With a single system, it can be done both manual or automated punch downs across multiple fermentation tanks, both truncated-cone and cylindrical. This allows direct intervention on the fermenting mass, precisely controlling the action on the cap of grape skins: partial or full punch down, timing, intensity, and frequency.
The punch down systems for premium red wines

Three generations of fulling systems, one continous evolution
Today, Leonardo® is in its third generation. The system has evolved through experience and constant dialogue with winemakers who demand the highest standards.
Leonardo 1: the first one punch down system
A mobile cap management system capable of serving multiple interconnected fermentation tanks through horizontal sliding systems supported directly by the vessels. Its clean industrial design ensures full integration into modern winery architecture.
Leonardo 2: integrated grape transport and loading system
This version introduces a key function: grape transport (whole, destemmed, or crushed) and direct loading into each fermentation vessel. This eliminates the need for pumps, reducing stress and preserving grape integrity.
Leonardo 3: the latest generation
Developed through over 20 years in collaboration between leading French and Italian winemakers, this system integrates all previous features and takes them further. It also includes elevated walkways for full access above the fermentation tanks. Leonardo creates a winery layout inspired by French tradition, but combined with Italian engineering precision.
