Kettmeir, a historic South Tyrolean winery and a benchmark in the production of Traditional Method sparkling wines, selected Gruppo LASI for the development of a complete stainless steel winery system designed to ensure production efficiency, process control and energy sustainability.
The project involved all major production stages of the winery, including grape reception, product transfer, fermentation, storage and temperature control, with integrated automation systems and advanced electronic process management.
Complete wine plant for fermentation, storage and cellar automation
The supply includes the grape reception area with conveyor belts, screw conveyors for pomace and stalk handling, as well as press loading and must discharge systems.
The fermentation and storage area features 11 temperature-controlled rectangular tanks from 90 to 150 hl for wine fermentation and storage, 4 temperature-controlled conical tanks from 40 to 60 hl, and 9 insulated cylindrical stainless steel tanks for fermentation, storage and tartaric stabilization of white wines, available in standard and double-cell configurations with capacities ranging from 100 to 150 hl.
The installation is completed by 2 patented Leonardo® punch-down systems, together with stainless steel stairs, walkways and platforms connecting the different operational areas of the winery.
As part of the integrated project, LASI also developed the cooling hydraulic system, compressed air lines and electronic control panels, ensuring advanced automation, operational continuity and maximum efficiency throughout the winemaking process
