Desenzano sul Garda – Brescia – Italy – 2023

The Ca’ Maiol winery, part of the Santa Margherita Group, represents a model of excellence in modern winery design, showing how an integrated approach can transform complex requirements into efficient and functional solutions.
Located in the heart of the Lugana wine region in Desenzano del Garda, it is a benchmark for white wine production and stands out for its perfectly gravity-fed winemaking process, designed to preserve the quality of the grapes at every stage.

In this context, LASI worked in synergy with NOFORM to deliver a complete “grape-to-bottle” project, covering grape reception, must separation, pressing, fermentation, wine storage and bottling systems, with each phase engineered to ensure efficiency and production continuity. L
ASI also developed the entire process system, including electrical, electronic and hydraulic systems, fully integrated into the architecture and concealed from view while maintaining performance, accessibility and ease of maintenance.

Complete winemaking project

The supply included tilting reception hoppers with vibrating systems, advanced grape distribution systems feeding four presses, complete stalk and pomace removal systems, over 60 stainless steel wine tanks for vinification and storage (120–240 hl), fully insulated and temperature-controlled, as well as a 2,000 hl custom pressure vessel positioned at the center of the winery to create homogeneous wine masses and transfer the product under pressure directly to bottling, eliminating the need for centrifugal pumps.

The winery is further equipped with two batteries of 120 hl conical fermenters with patented “Leonardo” punch-down systems and more than 300 m² of stainless steel walkways, along with integrated temperature control hydraulic pipelines and advanced electrical systems supporting optimized management of all winemaking processes.
