Bolzano – Italy – 2018
Cantina Produttori di Bolzano (Kellerei Bozen) is a historic and prestigious wine cooperative from South Tyrol, established in 2001 through the merger of the Gries (1908) and Santa Maddalena (1930) wineries. Today, it brings together 224 winegrower families working across steep slopes and valley floors, following a production model focused on sustainability and the enhancement of local grape varieties, with wines recognized internationally.
The winemaking process is based on a gravity-fed system that minimizes mechanical stress and preserves grape integrity throughout all stages, from reception to final wine storage.
High-efficiency winemaking plant
Within this context, LASI designed, manufactured and installed a complete high-efficiency stainless steel winery system, covering all operational areas including grape reception, pressing, fermentation and storage for both white and red wines. The system features a wide range of temperature-controlled stainless steel tanks, configured for fermentation, clarification and storage, including double- and triple-cell solutions as well as automated pomace extraction systems for red wine processing.
Overall, the supply includes 93 stainless steel wine tanks, ranging from medium to large capacities (from 100 up to 1,500 hl), distributed across multiple process lines, together with a large-capacity on-site built storage tank.
The installation is completed by over 1,000 m² of stainless steel walkways and connecting structures, designed to ensure safe elevated access and operational continuity throughout the entire winery.
