Caldaro, Bolzano – 2021

For over 400 years, Manincor has carried forward the winemaking tradition of Caldaro, in the heart of Trentino-Alto Adige, one of Italy’s most renowned and prestigious wine regions. Founded in 1608, this historic estate is distinguished by a philosophy focused on purity and authenticity, with deep respect for the natural cycles of the vineyard.

Both in the vineyard and in the winery, human intervention is reduced to a minimum and aimed at supporting the natural evolution of the wine. Each grape variety is vinified separately, with spontaneous fermentations driven by indigenous yeasts from the estate vineyards. Racking and bottling follow lunar cycles, while ageing takes place in oak barrels made from trees from the surrounding forests.

To enhance this unique production philosophy, Manincor selected LASI and NOFORMSTUDIO as partners for the development of its winemaking system.
The project includes custom conical stainless steel tanks, loading cuvons and the LEONARDO® 3 punch-down system, together with a shaped access platform designed around the tank manholes with an arched geometry. The entire installation features advanced design solutions and LASI’s satin Color® finish.
The system is completed by process piping for temperature control and a fully digitalized thermoregulation system with advanced electronic management, ensuring precise control of all winemaking operations.
