AOC Les Baux-de-Provence – France – 2016

The project developed by Gruppo LASI for Château Romanin, located in the AOC Les Baux-deProvence in France, represents a significant achievement within the world of premium biodynamic wineries.
Set in the heart of the Alpilles and renowned for its iconic “cathedral winery” carved into the limestone rock, the estate is a unique example of architecture integrated with the surrounding landscape.

The production philosophy follows natural cycles, solstices and lunar phases, in line with organic and biodynamic viticulture principles, resulting in certified wines with elegance and structure.

Within this context, LASI developed an advanced fermentation and maceration system composed of 14 insulated and temperature-controlled double-cell conical stainless steel tanks, together with 4 tanks dedicated to the stabilization of white and rosé wines. To ensure precise and gentle management of extraction phases during maceration, the system was completed with 2 patented “Leonardo®” manual punch-down systems installed at ceiling level.
This project confirms LASI as a specialized partner for high-end wineries, where advanced winery equipment, engineering precision and respect for terroir come together in perfect balance.
